Baked Pineapple

Poached Pears

Baked Pineapple Print

Makes 7 servings

Ingredients:

  • 1 20oz-can crushed pineapple, drained
  • 1 cup white sugar or sugar substitute
  • 2 tablespoons cornstarch
  • ¼ cup cold water
 
  • 2 eggs, lightly beaten
  • 1 tablespoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 teaspoon ground cinnamon
 

Directions:
Preheat oven to 350F. Grease a 9x9 baking dish. In a mixing bowl, mix together pineapple, sugar, cornstarch, water, eggs and vanilla. Pour this mixture into the prepared baking dish. Top with dotted butter and cinnamon. Bake in preheated 350F oven for 1 hour.

Poached Pears Print

Makes 8 servings

Ingredients:

  • 1 cup red hot cinnamon candies
  • 3 cups apple cider
  • 4 large pears
 

Directions:
Peel core and slice pears in half lengthwise. Melt the cinnamon candies in the apple cider over medium heat. Add the pears and coat them with the sauce. Cook and cover 20-25 minutes or until tender.
