Baked Pineapple Print

Makes 7 servings

Ingredients:

  • 1 20oz-can crushed pineapple, drained
  • 1 cup white sugar or sugar substitute
  • 2 tablespoons cornstarch
  • ¼ cup cold water
 
  • 2 eggs, lightly beaten
  • 1 tablespoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 teaspoon ground cinnamon
 

Directions:
Preheat oven to 350F. Grease a 9x9 baking dish. In a mixing bowl, mix together pineapple, sugar, cornstarch, water, eggs and vanilla. Pour this mixture into the prepared baking dish. Top with dotted butter and cinnamon. Bake in preheated 350F oven for 1 hour.
